World Publishing Company has announced the forthcoming publication of Nuzhat Classic Recipes, Volume One: The Stories Behind the Recipes, a cookbook by author and lifelong home cook Nuzhat Ahmed. The book features 29 classic South Asian dishes and the family memories associated with them, aiming to bring traditional home cooking and cherished stories to readers.
Organized into seven sections—Lamb & Beef, Chicken, Vegetables, Fish & Seafood, Rice, Breads, and Desserts—the collection includes everyday favorites such as Aloo Gosht, Qeema Matar, and Palak Aloo, alongside celebratory dishes like Chicken Chargha, Badami Qorma, Chicken Biryani, and Zarda rice. Each recipe provides a complete ingredient list, step-by-step instructions, serving suggestions, and practical cooking tips, making the book accessible for home cooks seeking dependable recipes that combine traditional flavors with approachable techniques.
What sets this cookbook apart is its emphasis on the stories behind the dishes. Readers will encounter memories of a grandmother preparing Badami Qorma in the style of royal kitchens, a father’s kitchen mishap that became a treasured family story, a London wedding where Rogan Josh was mistaken for spoiled qorma, and a mother who used homemade Firni to encourage her children to complete their chores. These narratives illustrate how recipes can serve as vessels for memory, carrying the voices and love of those who created them.
“Some recipes are more than food—they are vessels for memory, carrying the voices, gestures and love of the people who made them,” Nuzhat writes. “Sometimes a recipe is not just about the ingredients—it is about the person who taught you what home cooking tastes like.” This philosophy underscores the book’s dual purpose: to provide reliable recipes and to preserve the personal histories that make them meaningful.
The book also features home-friendly versions of popular dishes such as Chicken Tikka Masala, White Chicken Kadhai, Reshmi Kebab, Carrot Halva, Mango Kulfi, Gulab Jamun, and Classic Summer Pudding. Practical shortcuts help make these dishes approachable for cooks with busy schedules, ensuring that traditional flavors remain accessible to modern households.
Volume One is intended for readers who appreciate traditional recipes and for families who want to preserve their culinary memories. It is the first installment in a planned three-volume collection, with Volumes Two and Three to follow. The series promises to expand on the theme of connecting food with family heritage.
